Cut the squirrels into serving pieces. Bring the water to a boil in a kettle and add the squirrels, 1 piece at a time. Add the salt, pepper, onion, okra, lima beans, tomatoes, carrots and potatoes and bring to a boil. Reduce the heat and simmer for 4 hours, adding water as needed. Add the corn and simmer for 1 hour longer, stirring occasionally. Add the butter just before serving. Makes 6 servings |
