Venison Pot Roast

one  3 - 5 pound venison roast
1/2 teaspoon of pepper
2 teaspoons of salt
1/2 cup of flour
3 tablespoons of fat
4 - 6 small onions
1 cup of water

Soak the venison roast in cold water for several hours or overnight. Drain and season with pepper ands salt. dredge with flour and brown on all sides in hot fat in  Dutch Oven. Add the onions and water and cover. Simmer until tender. Potatoes and carrots may be added about 20 minutes before the roast is done.
