Combine the turtle meat, beef stock, bay leaf, mace, lemon juice and hot sauce in a 4 quart saucepan. Bring to a boil, then cook until the turtle meat is tender. Remove the bay leaf and mace, then add the egg white. Season with salt, pepper and sherry flavoring after removing from heat. Makes 8 servings |
