Mix the oil and lemon juice in a small bowl. Brush the mixture over the radicchio leaves. Set the leaves, cupped side up, in a 9 x 13 inch baking dish. Place the cheese in the radicchio cups and season to taste with pepper. Bake in a 350ºF. oven, just until the cheese is melted, about 4 to 6 minutes. Garnish each serving with a lemon wedge and 3 or 4 chives. Serve it hot or warm. Makes 6 servings |
