| Tomato Vinaigrette
4 large tomatoes 6 tablespoons of chopped parsley 1 clove garlic, crushed 6 tablespoons of olive oil 2 tablespoons of cider vinegar 1 teaspoon of salt 1/2 teaspoon of dried leaf basil 1/8 teaspoon of pepper |

Cut tomatoes into medium slices or chopped. Place in a bowl. Sprinkle with parsley. Mix together garlic, oil, vinegar, salt, basil and pepper. Pour over tomatoes and parsley. Cover, chill 3 hours or overnight. Makes 4 to 6 servings. |
