2 cups of fresh yellow, squash, cooked and drained 2 medium carrots, grated 2 tablespoons of chopped onion 1 can cream of mushroom soup One 2 ounce jar of chopped pimento One 8 ounce sour cream One 8 ounce package of herbed stuffing 1 stick of margarine |

Combine vegetables. Blend undiluted soup and sour cream; stir into vegetables mixture. Toss together stuffing and melted margarine. Pour half of the stuffing into a shallow 3 quart baking dish. Pour vegetable-sour cream mixture over the stuffing, then top with remaining stuffing. Bake at 350ºF. about 30 minutes or until set. |
