
| Spinach - Potato Puff
2 1/2 cups of hot mashed potatoes 1 1/2 cup of raw chopped spinach 1 teaspoon of salt 4 tablespoons of butter, melted Dash of pepper Dash of paprika 4 eggs, separated |

Combine all ingredients except eggs. Blend in 4 egg yolks. Beat egg whites until stiff and fold into mixture. Pile lightly into greased 1 1/2 quart casserole pan. Bake at 375ºF. until puffed and golden, about 40 minutes. |
