1 pound of small mushrooms, stalks 1 cup of boiling water 2 tablespoons of lemon juice 5 tablespoons of olive oil 2 tablespoons of Wine vinegar 2 cloves Garlic, minced 2 teaspoons of thyme, chopped 1 tablespoon of parsley, chopped |

Place the mushrooms in a heatproof bowl. Combine the water and lemon juice and pour over the mushrooms. Let stand for 5 minutes, then drain well. Mix the remaining ingredients and pour over the mushrooms. Cover and refrigerate for at least 2 hours or overnight before serving.
