| Zesty Asparagus
Two 15 ounce cans of extra-long tender green asparagus spears, drained 1/4 cup of vinegar 1/4 cup of cooking oil 2 tablespoons of chopped onion 1 tablespoon of diced pimento 1/2 teaspoon of salt 1/4 teaspoon of sugar 1/8 teaspoon of pepper |

Gently place asparagus spears in shallow container. Thoroughly combine remaining ingredients and pour over asparagus. Cover and chill 6 hours or overnight; check occasionally to see that all asparagus is covered with the marinade. Drain before serving. TIP: The longer the asparagus is in the marinade, the zestier the flavor will be. |
