Preheat the grill or preheat the oven to 450ºF. Scrub the potatoes but leave unpeeled. Slice in 1/2 inch rounds. Place the rounds on a baking sheet and sprinkle with the vinegar followed by the rub and herbs. Bake for 15 to 20 minutes, or until the potatoes are fork tender. Serve hot. Makes 4 servings |
