
| Southwestern Beef & Corn Bread Pie
2 tablespoons of vegetable oil 2 pounds of lean ground beef 3/4 cup of chopped onions 1 clove garlic One 8 ounce can of mild or hot chili salsa 1/3 cup of sliced black olives 1/2 teaspoon of dried oregano leaves 1/4 teaspoon of ground cumin 1/4 teaspoon of salt 1/4 teaspoon of pepper Two 8 1/2 ounce packages of corn muffin mix 2 eggs 2/3 cup of milk 2 to 3 teaspoons of chili powder 1 cup of shredded cheddar cheese |

Cook in an electric frying pan. Heat fry pan at 300ºF. Add oil, beef, onion and garlic; cook until beef is browned, stirring occasionally. Drain excess fat. Stir in salsa, olives, oregano, cumin, salt and pepper; cook, covered, at 200ºF. for 5 minutes. Make corn muffin mix according to package directions, using eggs, milk and chili powder, fold in cheese. Spoon batter over beef mixture in fry pan; cook at 225ºF. with cover ajar 1 inch, until batter is cooked through, about 20 to 25 minutes. Serves 8. |
