Pork Jambalaya
2 tablespoons of oil 1 1/2 pounds of pork cut in cubes 1 chopped onion 1/2 cup of green onion 2 tablespoons of parsley 1/4 cup of bell pepper 1/2 cup of dry white wine 1 teaspoon of garlic 1 1/2 cup of raw rice Salt and pepper to taste Louisiana Hot Sauce to taste Chicken stock or water |

Over medium heat in large pan heat oil, brown off the pork, then remove from pot. Add onion, parsley and bell pepper; cook until brown. Stir in wine, garlic, rice, meat, salt and hot sauce. Add stock or water to cover rice by 1/2 inch. Cook over medium heat. Bring to a boil and then reduce heat. Cover and cook at least 1 hour. Then check rice for doneness. Stir, cover and let steam another 15 to 20 minutes. |
