Pork Jambalaya

2 tablespoons of oil
1 1/2 pounds of pork cut in cubes
1 chopped onion
1/2 cup of green onion
2 tablespoons of parsley
1/4 cup of bell pepper
1/2 cup of dry white wine
1 teaspoon of garlic
1 1/2 cup of raw rice
Salt and pepper to taste
Louisiana Hot Sauce to taste
Chicken stock or water

 

Over medium heat in large pan heat oil, brown off the pork, then remove from pot. Add onion, parsley and bell pepper; cook until brown. Stir in wine, garlic, rice, meat, salt and hot sauce. Add stock or water to cover rice by 1/2 inch. Cook over medium heat. Bring to a boil and then reduce heat. Cover and cook at least 1 hour. Then check rice for doneness. Stir, cover and let steam another 15 to 20 minutes.
