Jambalaya 1
1 1/2 cup of uncooked rice 2 cups of cooked chicken, diced 1 cup of cooked shrimp 1/2 pound of pork sausage 1/2 cup of minced onion One 8 ounce can of stewed tomatoes 2 cups of chicken stock 2 tablespoons of parsley 1/4 teaspoon of garlic salt 1 teaspoon of French's Cajun grill seasoning |

Cook rice according to package directions. In heavy saucepan brown sausage, add onions and cook through. Add tomatoes and broth and bring to boil. Reduce heat and simmer 25 minutes. Add parsley, garlic salt, Cajun seasoning, chicken, shrimp, cooked rice, salt and pepper to taste. Place in 2 quart roasting pan and bake in 350ºF. oven for 35 minutes. Serve hot, sprinkled with chopped green onion tops. |
