Creole Gumbo
2 1/2 cups of okra 1 pound of brisket, diced 1 bay leaf 3 sprigs parsley, chopped 1/3 cup of cooking fat 1/2 onion, chopped 1/2 pound of ham, diced 2 cups of canned tomatoes 6 cups of boiling water 2 tablespoons of flour Salt, pepper & cayenne 1 green pepper, chopped |

Brown ham and brisket in cooking fat. Remove meat. Brown onion and okra in hot fat. Add flour slowly. Stir until blended. Add meat and remaining ingredients, stirring constantly. Season to taste. Cover. Simmer slowly until meat is tender. Serve hot with steamed rice. 12 servings. |
