Low-fat Cream Of Pumpkin Soup (2 Pts)

1 tablespoon of butter 3/4 cup of chopped onion 3/4 cup of chopped celery 1 clove garlic, chopped 2 tablespoons of all purpose flour 1/2 teaspoon of salt 1/4 teaspoon of ground ginger 1/4 teaspoon of ground nutmeg 2 cups of chicken stock 14 ounces of pumpkin 2 cups of milk |

In large saucepan over medium heat, melt butter. Add onion, celery and garlic. Cook 8 - 10 minutes or until softened. Stir in flour, salt, ginger and nutmeg. Cook for 1 minute over low heat, stirring until well blended. Gradually stir in chicken stock, whisking until smooth. Stir in pumpkin. Cover. Simmer 15 - 20 minutes, stirring occasionally. Stir in milk. Heat until hot. Serving Size: 6
