Stir-Fried Succotash

3 slices of bacon
1 - 10 ounce package of frozen baby lima beans
2 tablespoons of vegetable oil
1/2 cup of chopped onions
1 - 16 ounce package of frozen whole kernel corn
2 cups of diced tomatoes
1 - 10 ounce package of frozen okra, cut and thawed
1/4 cup of chicken broth
2 teaspoons of sugar
salt and pepper to taste

Instructions:

Cook the bacon in a skillet until crisp, reserving 3 tablespoons of drippings. Crumble the bacon and set it aside. Cook the lima beans as directed on the package and drain. Heat a wok or large skillet until hot. Add the bacon drippings and vegetable oil, rotate to coat. Add the onion and corn, stir fry for about 3 minutes. Add the lima beans, tomatoes and okra, stir-fry for 2 to 3 minutes. Add the chicken broth, sugar, salt and pepper and crumble the bacon. Cover and continue cooking for a few minutes. Serve over rice if desired. Makes 7 servings
