| Battered Hog Maw 4 quarts of water 4 teaspoons of salt 2 1/2 teaspoons of pepper 3 1/2 pounds of hog maw 2 eggs 3 cups of milk 4 cups of plain white flour 4 cups of vegetable oil for deep frying |
Instructions: In a deep boiler add water, 2 teaspoons of salt, pepper and hog maw. Cook for 4 hours or until tender. In a bowl beat the eggs, adding milk. Set aside. Mix the flour and 2 teaspoons of salt. Take the hog maw and dip it into the egg mixture, covering evenly on both sides, then roll it in flour. In a skillet, brown the hog maws and serve with hot pepper sauce. Serves 6 to 8 |
