| Summertime Potato Salad 5 medium potatoes 4 hard cooked eggs 4 stalks of celery 3 gherkins, chopped 1 tablespoon of pickle juice 1/2 of a medium white onion, diced 1/2 teaspoon of salt 1/2 teaspoon of black pepper 1/2 teaspoon of sugar 2 whole red pimentos, chopped 5 tablespoons of mayonnaise, well rounded 2 teaspoons of prepared mustard 1/4 teaspoon of paprika |
Instructions: Boil the potatoes until they are tender, 15 to 20 minutes. Refrigerate until cool, or run under cold water. Once cool, peel and dice. Add the remaining ingredients except for the paprika and sliced egg. combine well. Serve and enjoy! Makes 6 servings |
