Lima Bean Salad 2 packages (10 ounces each) of frozen baby lima beans 1/4 cup of sliced green onions 1/4 cup of minced parsley 1 chopped hard-cooked egg 1/4 cup of nonfat mayonnaise dressing 1/4 cup of nonfat sour cream alternative 1 tablespoon of tarragon vinegar 1 teaspoon of dried dill weed 1/2 teaspoon of salt 1/8 teaspoon of pepper 8 lettuce leaves 4 tomatoes, cut into wedges |
Instructions: Cook the lima beans according to the package directions. Cool under cold running water. Drain well. Place in a large bowl. Add the onions, parsley and egg. Combine the mayonnaise dressing, "sour cream", vinegar, dill weed, salt and pepper. Add to the lima beans. Toss to mix. Serve on lettuce with tomato wedges. |
