| Spicy Fruit and Pork Kabobs 1 1/2 pounds of lean boneless pork 2 tablespoons of cooking oil 2 tablespoons of balsamic vinegar 1 teaspoon of finely shredded orange peel 2 tablespoons of orange juice 1 clove garlic, minced 1/4 teaspoon of salt 1/4 teaspoon of ground cumin 12 - 1 1/2 inch cubes of fresh pineapple 12 - 1 1/2 inch cubes of cantaloupe |
Instructions: Trim away any excess fat. Cut the pork into 1 1/2 inch cubes. Place in a plastic bag and set into a shallow dish. For the marinade, combine the oil, vinegar, orange peel and juice, garlic, salt and cumin. Pour over the meat cubes, and seal the bag. Marinate it in the refrigerator for 2 to 4 hours, turning the bag over once. Drain the meat, reserving the marinade. Alternately thread meat, pineapple and cantaloupe onto 6 long metal skewers. Grill the kabobs on an uncovered grill directly over medium coals for 14 to 16 minutes or until the meat is slightly pink in the center, turning and brushing once with the marinade.
