| Quick and Easy African Vegetarian Stew 4 small Kohlrabies, peeled & cut into chunks *See Note 1/2 cup of Bulgar Wheat 1 large onion, chopped 1/4 cup of raisins 2 sweet potatoes, peeled & cut into chunks 1 teaspoon of ground Coriander 1/2 teaspoon of ground Turmeric 1/2 teaspoon of ground ginger 1/4 teaspoon of ground cumin 2 zucchini, sliced thick 1/2 teaspoon of ground cinnamon 5 tomatoes, fresh or 16 oz can of tomatoes 15 ounce can of Garbanzo beans 3 cups of water |
Instructions: Combine all the ingredients in a large saucepan. Bring to a boil, lower the heat and simmer until the vegetables are tender. Serve the couscous separately, if desired. *Parsnips may be substituted for the kohlrabi. |
