Texas Fire Grits

Texas Fire Grits

2 cups of uncooked yellow grits
1/2 pound of sharp Cheddar cheese, grated
1/2 cup of butter or margarine
2 cloves garlic, crushed*
2 teaspoons of Tabasco*
One 4 ounce can of chopped green chilis*
2 jalapeno peppers, seeded and chopped*
3 eggs, well beaten

 

*Or instead of these, substitute 1/4 teaspoon cumin and 1 (10 ounce) can tomatoes and green chilis. Cook grits according to package directions. Mix in the remaining ingredients. Add beaten eggs last. Bake in a large greased casserole at 350ºF. for 45 minutes. Serves 12-14
