Grits Casserole
4 cups of water 1 cup of quick grits 3 eggs 1 cube oleo 1 teaspoon of salt Dash of garlic salt 3 cups of grated cheese 2 cans green chilies, chopped |

Preheat oven to 350ºF. In 4 quart saucepan bring 4 cups water to boil. Stir in grits and cook 5 to 7 minutes or until thickened. Melt 1 cube oleo in grits. Slightly beat 3 eggs in measuring cup and add enough milk to make 1 cup. Stir egg mixture, grated cheese and chilies into grits. Mix well and pour into greased casserole dish. Bake 35 to 40 minutes or until it seems to be set in the middle. |
