Bacon Grits Casserole

Bacon Grits Casserole

1 cup of quick grits
4 cups of water
1 cup of sharp cheddar cheese, grated
1 package of bacon
1/2 cup of milk
1 dash salt
1 stick margarine or butter
6 eggs

Cook grits with water and salt according to package directions. Add butter and cheese; cook over low heat until melted. Cool. Stir in 2 beaten eggs. Pour in 2 quart casserole dish. Set aside. Fry until the bacon is crisp. Crumble and sprinkle over grits, reserving 1/2 cup bacon crumbs. Beat 4 eggs and milk. Pour egg mixture over bacon and grits. Bake at 350ºF. for 50 minutes. Sprinkle top with remaining bacon crumbs. Serve hot. Yields 6 servings.
