| Ladybug's Collard Greens 3 pounds of collard greens 1 cup of lean ham pieces or bacon 3 tablespoons of vegetable oil 1 quart of hot water 2 teaspoons of salt 1 teaspoon of sugar |
Instructions: Wash your collards, removing any bad stems and bad spots, then chop or shred your greens. Cook the ham pieces slowly in the oil until crisp. Add the water and simmer for 10 minutes. Remove the ham and set it aside. Add the salt, sugar, and collards to the pot. Turn the heat to medium high and let the water begin to boil. Stir, then lower the heat to low. Let the greens cook, slowly, until tender about 45 minutes. Mash a stem to check for tenderness. Once the collards are tender, you can chop them into smaller pieces. Add the ham to the greens and enjoy! Serves 4 to 6 |
