| Deluxe Collard Greens 3 bunches of collard greens 4 ham hocks 3 1/2 quarts of water 4 tablespoons of vegetable shortening 1 tablespoon of sugar 1 teaspoon of salt |
Instructions: Pick, wash and remove the stems from the greens. Boil the ham hock for 1 hour in water. Do not drain. Add the greens, shortening, sugar and salt. Simmer for 2 1/2 to 3 hours or until tender. The secret to perfect collards is to cook until very tender. Serves 6 to 7 |
