| Sweet Potato Biscuits 2 1/2 cup of melted butter 1 cup of cooked mashed sweet potatoes 2/3 cup of milk, at room temperature 2 cups of all purpose flour, sifted 2 tablespoons of brown sugar 1 teaspoon of salt 4 teaspoons of baking powder |
Instructions: Preheat your oven to 400ºF. Beat your melted butter into the mashed potatoes. You may season them also at this time. Stir in the milk. Sift together the flour, sugar, slat and baking powder. Slowly stir in the remainder of the dry ingredients into the sweet potato mixture. Once a nice ball forms, turn out your dough onto a well floured board. Use a considerable amount of flour on your hands for patting as the mixture is a bit sticky. Pat it out 1/2 inch thick and cut into circles with a 2 inch cookie cutter or the rim of a floured glass. Place the biscuits with sides touching in two greased 8 inch round pans and bake for 20 minutes or until golden brown. |
