Instructions: Cook as many squash as you like. Add the eggs, chopped onion into the mixture, then add enough cornmeal/flour mixture to thicken the squash. Season to taste. Cook in deep hot oil as you would hushpuppies. These will not be as round as hushpuppies, but they make a delicious dish to eat with fish. |
