| Hoecakes 1 2 cups of white or yellow cornmeal 1/2 teaspoon of salt 1 cup of hot water 2 tablespoons bacon drippings 1 to 1 1/2 cups of cold water |
Instructions: In a bowl combine the cornmeal, salt, hot water and bacon drippings. Add enough cold water to make the batter pour easily. Grease a griddle or heavy skillet and set it over moderate heat. Pour about 2 tablespoons of batter on the griddle/skillet for each hoecake. After 3 to 5 minutes or when the top begins to bubble, flip the hoecake with a spatula. Cook until the bottom turns a light brown. Eat immediately! |
