Pigs Feet in Tomato Sauce
5 medium pigs feet, split 2 tablespoons of lemon juice 1/2 teaspoon of salt 1/2 teaspoon of black pepper 3 large onions, chopped 1 clove of garlic 2 bay leaves 1/2 cup of white vinegar 3 stalks of celery with leaves, chopped 1 cup of prepared tomato sauce |
Instructions: Wash the pigs feet in cold water and pat dry. Rub each foot with 1 teaspoon of lemon juice and sprinkle with salt and pepper. Place the feet in a medium pot and cover with water. Bring to a boil, reduce the heat, cover and cook for 30 minutes. Add the onions, garlic, bay leaves, vinegar, celery and tomato sauce to the pot. Cover and continue cooking for 1 hour or until the meat is fork tender. Add hot water as needed to keep the meat covered throughout the cooking time. Remove the bay leaves before serving. |
