Maine Seafood Chowder

6 slices of salt pork, diced
1 onion, chopped
6 raw potatoes, peeled and diced
2 cups of water
1 teaspoon of salt
2 pounds of cod or haddock, skinned, boned and cut into pieces
1 pound of sea scallops, cut into halves
2 boiled lobsters (about 1 pound each), shelled and cubed
4 cups of hot milk
2 cups of light cream
1/4 cup of butter or margarine
Chopped parsley
Paprika  

Cook the salt pork until crisp. Add the onion, potatoes, water and salt. Simmer, covered, until almost tender. Add the fish, scallions, lobster and hot milk. Simmer over very low heat for 10 minutes. Add cream and butter. Reheat but DO NOT BOIL. Garnish with chopped parsley and sprinkle with paprika. Makes 6 servings
