Crab Meat Soufflé

1/4 cup of flour
1/4 teaspoon of salt
1/4 teaspoon of pepper
1/2 cup of mayonnaise
1/4 cup of milk
1/4 teaspoon of basil
1/4 teaspoon of tarragon
4 egg whites
1 1/4 cups of crab meat, cleaned and flaked

 

Preheat oven to 325ºF. Grease a deep 7 inch casserole. Combine the flour, pepper, salt and mayonnaise. Do not beat. Stir only to mix. Add the milk slowly, stirring gently. Add herbs. Stir only until smooth. Stir in the crab meat. Beat the egg whites until they stand in stiff points when beater is removed. Fold the crab mixture gently into the whites. Pour at once into the prepared baking dish. Set the dish into a shallow pan of hot water. Bake for 40 to 45 minutes. Makes 4 servings.
