1 tablespoon of butter or margarine 1 tablespoon of all purpose flour 1/4 teaspoon of dried dillweed 1 teaspoon of salt 1/8 teaspoon of pepper 1 cup of milk 1/2 cup of mayonnaise or salad dressing 2 tablespoons of finely chopped onion 5 medium potatoes, cooked, peeled and diced 4 cups Paprika
Melt butter or margarine over low heat. Stir in flour, dillweed, salt, pepper. Add milk all at once. Cook and stir till mixture thickens and bubbles. Blend in mayonnaise and onion, fold in cooked potatoes. Spoon into serving dish, sprinkle with paprika. Garnish with parsley, if desired. Makes 4 to 6 servings.
