1 teaspoon of white wine vinegar 1 1/2 teaspoons of Dijon mustard 1 tablespoon of fat free chicken broth 1 tablespoon of olive oil 2 tablespoons of finely chopped mixed fresh herbs 1 head of lettuce(1/2 pound), leaves torn into small pieces
Mix the vinegar, mustard, and broth in a large bowl. Slowly add the oil while whisking. Add the herbs and salt and pepper to taste. Add the lettuce and toss with vinaigrette until the pieces are coated. Makes 4 servings
