Rice Pilaf

1/2 cup of butter or margarine (1 stick)
1 cup of uncooked rice
1 cup of chopped onion
3/4 cup of chopped celery
1 can mushrooms, sliced (drain & reserve juice)
1 can chicken consommé

Brown rice in butter for approximately 15 minutes, then add onions and celery and continue to brown rice. Cook until onions and celery are soft and rice is brown. Stir in 2 cups of consommé, juice from mushrooms and enough water to make 2 cups. Add mushrooms. Put into casserole dish and bake at 350ºF. for 1 hour or until rice is tender. Serves 8
