3/4 cup of chopped onion 1 1/2 lb. zucchini thinly sliced 3 tablespoons of butter One 16 ounce can of whole kernel corn One 16 ounce can of tomatoes 3 cups of cooked rice 1/4 teaspoon of oregano, coriander 1 1/2 teaspoon of salt 1/4 teaspoon of pepper |

Sauté onion and zucchini in butter in skillet until tender. Add remaining ingredients, mix well, and simmer for 15 minutes, stirring occasionally. Serves 8 |
