| Confetti Rice
2 cups of tomato juice 1 cup of frozen mixed vegetables 1 1/2 cups of instant rice 1/8 teaspoon of pepper
Combine tomato juice and mixed vegetables in medium saucepan; bring to a boil. Stir in rice and pepper. Cover, turn off heat and allow to stand 6 minutes. Fluff with fork. Yield 4 servings |
