
| Barley Breakfast Pudding
1 cup of cooked barley 1/4 cup of unfiltered apple juice 1/2 cup of diced apples 1/8 teaspoon of nutmeg 1/4 teaspoon of cinnamon 1/2 teaspoon of vanilla 3 tablespoons of raisins 1 tablespoon of chopped walnuts |

Mix all ingredients together and bake in a non-stick pan (use Pam) for 30 minutes at 350ºF. Serves 2. |
