Season the turkey with salt and pepper, close body cavities. Place the un-stuffed turkey, breast side down, in V shaped rack in roasting serving pan. Roast in preheated 325ºF. oven for 2 - 2 1/2 hours. Meanwhile, combine the dressing mix with cooked sausage and drippings, apples, celery, onion and water; toss lightly to blend thoroughly. Remove roasted bird from pan, take out rack and pour off drippings. Place bird, breast up, in bottom of pan. Spoon dressing around bird. Return turkey to oven. Continue roasting 1 hour longer or until a meat thermometer registers 185ºF. in thigh and dressing is crisp around the edges. Serves 8 |
