
| Healthy Turkey Chili 1
2 cups of chopped cooked turkey 1 garlic clove, minced 1 medium onion, chopped 1 sweet green pepper, chopped 1 onion, quartered 1 green pepper, sliced into strips 1 can of red kidney beans, (17 oz) 1 can of tomato paste, (6 oz) 1 can of tomatoes, (28 oz) 1 bay leaf 1/2 teaspoon of chili powder 1/2 teaspoon of cumin seeds |

Combine the turkey, garlic, onion, and green pepper in a nonstick skillet. Sauté until the vegetables are soft. Add the remaining ingredients and cover. Simmer over low heat for 30 to 60 minutes, or until the flavors are blended.
This recipe yields 4 servings.

Hearty Turkey Chili 2
1/2 cup of chopped onion 1 pound of leftover turkey, chopped 2 cups of unsalted canned tomatoes 4 cups of canned kidney beans ; drained 1 teaspoon of sugar 1 1/2 tablespoons of chili powder 2 cups of chopped celery 8 tablespoons of fat-free sour cream ; for topping
Sauté the onions and turkey together over low heat until onions are cooked. Add the rest of the ingredients except for the celery. Cover and cook for 20 minutes, adding the celery during the last 10 minutes. Top each serving with a tablespoon of fat-free sour cream.
