3 Cornish hens, 1 1/2 lbs. each 1 lemon 3/4 teaspoon of salt 1/4 teaspoon of black pepper 3 tablespoons of melted butter Dash of paprika |

Rinse and dry hens (each hen should serve 2, if hens weight less than 1 pound, cook 1 per person). Rub inside and outside with lemon, cut in half. Cut up lemon and tuck pieces into cavity of hens. Season hens with salt and pepper. Brush with melted butter and dust lightly with paprika. Roast in 350ºF. oven for 45 minutes to 1 hour. Yields: 6 servings. |
