Preheat your oven to 350ºF. Season the duckling with salt and pepper. Heat oil in frying pan. Add duck and garlic, brown duck on all sides. Transfer duck to a large casserole dish. Mix remaining ingredients together and add to duck. Cover and bake for 1 1/4 to 1 1/2 hours or until the duck is tender. Stir mixture occasionally to prevent sticking. Remove from oven and serve. Serves 6 |
