Rinse the duck, pat dry with absorbent paper. Rub the inside with salt and pepper; place in roasting pan. Add sauerkraut, water and sugar. Cover and bake at 350ºF. for 20 - 25 minutes per pound or until the duck is tender and golden brown. Serve with creamy mashed potatoes. Kraut may be used as stuffing. Makes 5 stuffing |
