Braised Duck with Sauerkraut

one 5 pound duck
1 tablespoon of chopped onion
1 teaspoon of dry mustard
salt and freshly ground pepper

Mayonnaise
1 pound of shrimp, cooked and cleaned
3 tablespoons of butter
2 tablespoons of flour
1 1/2 cups of milk
buttered bread crumbs

In a 6 - 7 quart casserole brown the dusk in bacon fat on all sides. Remove duck and mix in sauerkraut, wine, parsley, onion, thyme, and caraway seeds. Place duck on top. Cover the casserole and bake in 325ºF. oven for 1 1/2 hours. ten minutes before the duck is done, pour in cream and season to taste. Serves 4
