Sweet River Duck 4 ducks, quartered 1/2 cup of apricot preserves 1/2 cup of lemon juice Zest of 1 lemon 1 lemon, sliced 1/2 teaspoon of ginger Arrange the ducks in a baking dish and spread with the apricot preserves. Pour the lemon juice over the ducks. Sprinkle with the lemon zest. Cover and marinate in the refrigerator for at least 6 - 8 hours or overnight, turning several times. Preheat the oven to 350ºF. Top the ducks with the lemon slices and sprinkle with the ginger. Bake for 1 - 1 1/2 hours, or until the juices run clear. Serves 6 - 8 |
