| Sweet Potato Pone
4 cups of shredded raw sweet potato (1 lb.) 1 cup of water 1/2 cup of packed brown sugar 1/2 teaspoon of salt 1/4 teaspoon of ground ginger 2 tablespoons of butter or margarine
Combine potatoes, water, sugar, salt and ginger; turn into 1 quart casserole. Dot with butter. Bake at 350ºF. until potatoes are tender and caramelized, stirring occasionally, about 2 hours. Makes 4 servings. |
