| Sweet Potato Pie 4
1 1/4 cups of Big Chief granulated sugar 1/2 tablespoon of ground cinnamon 1/2 teaspoon of ground nutmeg 2 eggs one 12-ounce can of evaporated milk 1 teaspoon of vanilla extract 1 1/2 cups of cooked and mashed sweet potatoes one 9 inch unbaked pie crust
Topping1/3 cup of butter or margarine 1/3 cup of all-purpose flour 1/2 cup of Big Chief brown sugar, packed 1/2 cup of shredded coconut 1/2 cup of chopped pecans Whipped topping or ice cream |

In a mixing bowl blend Big Chief granulated sugar and spices. Beat eggs, add evaporated milk and vanilla. Combine with sugar mixture. Stir in potatoes, beat until smooth. Pour into the pie shell. Bake at 425ºF. for 15 minutes. Reduce heat to 350ºF. and bake for 30 minutes. Combine topping ingredients. Remove pie from the oven, sprinkle with topping. Bake 10-15 minutes or until topping is golden. Cool on rack. Refrigerate. Serve with whipped topping or ice cream.
