Preheat oven to 350ºF. In a large bowl cream the butter and sugar. Gradually add diced sweet potatoes and blend until smooth. Add eggs, spices and milk to mixture, mixing well. Pour into unbaked pie crust. Bake for approximately 1 - 1 1/4 hours or until knife inserted halfway between center comes out clean. Makes one 10 inch pie. Old Fashioned Sweet Potato Pie
2 medium sweet potatoes, sliced 1/2 cup of water 1/8 teaspoon of cinnamon Two 9-inch pie crusts 1/2 cup of sugar 1/2 cup of butter 1/8 teaspoon of ground cloves
Boil potatoes, slice, mash and lay in crust. Combine remaining ingredients and pour over potatoes. Bake at 325ºF. for 50 minutes. May substitute vanilla for spices. Sweet Potato Pie
2 1/2 cups of mashed sweet potatoes 1/2 cup of butter or margarine 1 1/4 cup of sugar 1 tablespoon of flour 1/2 teaspoon of salt 1/2 teaspoon of nutmeg 1/2 teaspoon of ginger 1/2 teaspoon of cinnamon 1/8 teaspoon of cloves 2 eggs 2 cans evaporated milk 2/3 cup of milk 2 (9 inch) unbaked pie shells
Combine sweet potatoes and butter or margarine, mix until well blended. Add sugar, flour and spices, mix well. Blend in eggs, and milks, mix well. Pour into pie shells. Bake at 425ºF. oven for 10 minutes. Reduce oven temperature to 350ºF. and cook for 1 hour. |
