Sweet Potato Bread Pudding

1 1/4 pounds Sweet potatoes; peeled
2 cups of raisins
1/4 cup of dark rum
5 Egg; slightly beaten
1/2 cup of sugar
1 quart of whipping cream
2 cups of half-and-half
2 tablespoons of dark syrup or molasses
1 tablespoon of cinnamon

Steam sweet potatoes and set aside - soak raisins in rum - mix eggs and next 5 ingredients; add bread pieces, mashed sweet potatoes and raisins Bake in TWO 11 x 7 x 1 1/2 dishes at 350ºF.  for one hour or until set.

Rum Sauce 1 1/2 cup butter 1/4 cup dark rum 3 cups powdered sugar 1 egg yoke Melt butter, stir in rum; add powdered sugar, whip until smooth. Stir in egg yoke, cook 5 minutes and serve warm.
