| Quick Sweet Potato Pie Main Ingredient: Potato, Sweet Potato, Pie
1 cup of cooked mashed sweet potatoes
1 teaspoon of vanilla extract
1/2 of stick of melted diet margarine
1/2 cup of white sugar
1/2 cup of dark brown sugar
1/4 cup of egg substitute
1 Dash of salt
1 Dash of cinnamon and nutmeg
1 Unbaked pie crust |

Preheat oven to 400ºF.. Mix together sweet potatoes, extract, margarine, white and brown sugars, egg substitute, salt, cinnamon, and nutmeg. Blend well. Pour into pie crust and bake 12 minutes at 400ºF.. Reduce oven temperature to 350ºF. and bake until done.
